Goose Island hits the tasting table today with an Imperial IPA simply called “The Illinois”. It should come as no shock after seeing the name that the brewery is based in Chicago. This seasonal offering pushes the style a little further than the Alaskan double IPA we had last week with a 9% ABV and 95 IBUs. A blend of Chinook, Cascade, Citra and Meridian are used to create the hop profile. Time to taste and see if we will “shuffle” off to buy more or bury our heads in the dugout of a century of shame and hope for next year.
